Coconut Chia Pudding With Strawberry Compote
While I am definitely a morning person, I know lots of people aren’t! One way to make mornings a little bit easier is to focus on something you’re looking forward to that day. I always look forward to breakfast, which is why I wanted to share my recipe for Coconut Chia Pudding with Strawberry Compote!
I’m sure one of the main reasons people love chia pudding is because they can be made ahead of time! That means you can use chia pudding as a make-ahead breakfast, snack or dessert.
Coconut Chia Pudding With Strawberry Compote
The creaminess of the chia seed pudding with coconut milk works so beautifully with this strawberry compote — I especially like finding a couple of little chunks of strawberry in the compote.
Prep time: 5 mins + overnight chilling time
Cook time: 15 mins
Total time: 20 mins + overnight chilling time
Serves: 2
Dietary preferences: Nut-free, Gluten-free, Vegetarian
Ingredients:
Chia pudding
- 4 tbsp chia seeds
- 250ml unsweetened coconut milk
- 30g low-fat plain yoghurt
- ¼ tsp ground cinnamon
- pinch of salt
- 4 strawberries, quartered
- 2 tbsp coconut flakes, toasted
Strawberry compote
- 250g strawberries, hulled and quartered
- 2 tsp vanilla extract
- 2 tsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp honey.
Method:
1. Place the chia seeds, milk, yoghurt, cinnamon and salt in a bowl and mix until well combined.
2. Cover with plastic film and place in the refrigerator to chill overnight.
3. To make the strawberry compote, rinse the strawberries under cold running water and drain. Heat a saucepan over medium heat. Add the strawberries, vanilla, lemon zest and lemon juice and cook for 10-15 minutes, stirring occasionally. The strawberries will start to break down and release some juice but there will be some chunks of strawberries too. Add the honey and cook for a further 5 minutes, stirring occasionally. Remove from the heat and set aside to cool slightly.
4. To serve, layer the coconut chia pudding with strawberry compote and top with strawberries and coconut flakes. Enjoy!

When making a chia seed pudding, the key is getting the seeds-to-liquid ratio in balance. I’ve made it super simple for you with this recipe! Now you can use the basic chia pudding recipe and even swap the coconut milk for almond milk if you prefer.
Chia pudding takes just a few minutes to make so you can easily make a couple and pop them in the fridge. You can easily switch out the strawberry compote for any other berry you might like as well — a mixed berry compote would also be super tasty.
