Who doesn’t love a delicious grilled cheese sandwich? They are the BEST when you are in a hurry, or just in need of some comfort food.

These are my healthy versions, and they also make a great lunch or snack for kids ;) The added ingredients such as veggies and protein help to make these sandwiches filling and keep you going throughout the day. If you are a fan of quick cooking, check out these healthy snack recipes

Caprese Grilled Cheese

Prep time: 5 mins

Cook time: 15 mins

Total time: 20 mins
Serves: 1
Dietary preferences: Vegetarian, Nut-free

Ingredients:

  • 1 medium roma tomato
  • 2 tsp balsamic vinegar
  • 2 slices sourdough bread
  • 6-8 basil leaves
  • 50g fresh mozzarella, sliced
  • sea salt and ground black pepper, to taste
  • ½ garlic clove

Method:

1. Slice the tomato lengthways and place on a paper towel. Leave to stand for 30 minutes.

2. Heat a non-stick fry pan over medium-high heat and spray lightly with oil spray. Place the tomato slices in the pan. Drizzle over the vinegar and cook for 5 minutes, shaking the pan occasionally. Turn the tomato slices over and cook for 1-2 minutes or until the tomatoes have softened. Remove from the pan and set aside to cool.

3. Preheat a sandwich press.

4. Place a slice of sourdough bread on a clean chopping board. Layer the basil leaves, tomatoes and mozzarella cheese and season with salt and pepper, if desired. Top with the other slice of sourdough.

5. Place the sandwich on the sandwich press and gently press down the lid. Toast for 3-5 minutes or until the cheese has melted and the sandwich is golden. Remove from the sandwich press and gently rub the toasted sourdough with the garlic clove.

6. To serve, cut the Caprese Grilled Cheese in half and place on a serving plate. Enjoy!

Turkey & Caramelised Onion Grilled Cheese

Prep time: 5 mins

Cook time: 45 mins

Total time: 50 mins
Serves: 1
Dietary preferences: Nut-free

Ingredients:

  • 1 small brown onion, sliced
  • 2 tsp olive oil
  • 2 tsp pure maple syrup
  • 2 tsp balsamic vinegar
  • 15g dried cranberries
  • sea salt and ground black pepper, to taste
  • 2 slices sourdough bread
  • 60g roast turkey breast, shredded
  • 30g Gruyere cheese, grated
  • 1 small handful rocket leaves

Method:

1. To caramelise the onion, heat the oil in a non-stick fry pan over low heat. Add the onion and cook for 20-30 minutes until soft and golden, stirring occasionally. Don’t be tempted to increase the heat as this can cause the onion to burn. Add the maple syrup, balsamic vinegar and cranberries and cook for a further 5-10 minutes or until sticky and caramelised, stirring occasionally. Season with salt and pepper, if desired. Set aside to cool.

2. Preheat a sandwich press.

3. Place a slice of sourdough on a clean chopping board. Layer half the cheese, caramelised onion, turkey, rocket and remaining cheese. Top with the other slice of sourdough.

4. Place the sandwich on the sandwich press and gently press down the lid. Toast for 3-5 minutes or until the cheese has melted and the sandwich is golden.

5. To serve, cut the Turkey & Caramelised Onion Grilled Cheese in half and place on a serving plate. Enjoy!

Blueberry & Apple Grilled Cheese

Prep time: 5 mins

Cook time: 5 mins

Total time: 10 mins
Serves: 1
Dietary preferences: Vegetarian

Ingredients:

  • 40g fresh blueberries
  • 2 slices sourdough bread
  • 2 tsp honey
  • 40g Havarti cheese, thinly sliced
  • ¼ medium apple, thinly sliced
  • 15g walnuts, chopped

Method:

1. Preheat a sandwich press.

2. Place the blueberries in a bowl and lightly crush with the back of a spoon.

3. Place the slices of sourdough on a clean chopping board and drizzle over the honey. On one slice of sourdough, layer the blueberries, half the cheese, apple, walnuts and remaining cheese. Top with the other slice of sourdough.

4. Place the sandwich on the sandwich press and gently press down the lid. Toast for 3-5 minutes or until the cheese has melted and the sandwich is golden.

5. To serve, cut the Blueberry and Apple Grilled Cheese in half and place on a serving plate. Enjoy!
