This recipe for an Egg Omelette In A Mug is perfect when you’re in a rush, but still want to eat something tasty and filling before you run out the door! 

Egg Omelette In A Mug Recipe

Total time: 7 mins
Serves: 1
Dietary preferences: Vegetarian, Gluten-free, Nut-free

Ingredients:

  • 2 tbsp baby spinach leaves, shredded
  • 1 tbsp medium green capsicum, diced
  • 1 tbsp medium tomato, diced
  • 1 tbsp feta cheese, crumbled
  • sea salt and ground black pepper, to taste
  • 1 large whole egg and 3 egg whites, lightly beaten

Method:

  1. Lightly spray a microwave-safe mug with oil spray.
     
  2. Place the spinach, capsicum, tomato and feta in a small bowl. Season with salt and pepper and toss gently to combine. Transfer to the prepared mug.
     
  3. Gently pour over the beaten egg and stir gently to combine.
     
  4. Microwave, uncovered, on high for one minute, then stir. Cook for a further 45 seconds to one minute or until the eggs are cooked to your liking. 
     
  5. Leave the omelette to stand for one minute. Enjoy!
