Chocolate & Raspberry Chia Pudding Recipe

Chocolate & Raspberry Chia Pudding Recipe
Total time: 10 mins + overnight chilling time
Serves: 4
Dietary preferences: Vegetarian, Gluten-free, Nut-free
Ingredients:
Chocolate layer
- 500ml low-fat milk
- 1 tbsp maple syrup
- 2 tbsp cacao powder
- 6 tbsp chia seeds
Raspberry layer
- 500ml low-fat milk
- 1 tbsp maple syrup
- 140g raspberries
- 6 tbsp chia seeds
To serve
- raspberries
- shredded coconut
Method:
1. To make the chocolate layer, whisk the cacao powder, maple syrup and milk together in a medium bowl. Add the chia seeds and stir until well combined. Cover with plastic film and refrigerate overnight until set.
2. To make the raspberry layer, place the raspberries and half of the milk in a high-powered blender and blend until smooth. Add the remaining milk and maple syrup and pulse a few times to combine. Place in a medium bowl, add the chia seeds and stir until well combined. Cover with plastic film and refrigerate overnight until set.
3. To serve, evenly spoon the chocolate chia pudding into 4 glasses and evenly top with the raspberry chia pudding. Top with raspberries and sprinkle over the coconut. Enjoy!
