Honey Carrots with Dukkah & Feta Recipe

Honey Carrots with Dukkah & Feta Recipe

Ingredients:
- 1 tbsp honey
- 1 tbsp olive oil
- 500g baby carrots, ends trimmed and scrubbed
- sea salt and ground black pepper, to taste
- 1 large handful rocket leaves
- 50g low-fat salt-reduced feta, crumbled
Dukkah
- 40g hazelnuts
- 1 tbsp sunflower seeds
- 1 tbsp sesame seeds
- ½ tbsp coriander seeds
- ½ tbsp cumin seeds
- ¼ tsp turmeric
- pinch of ground cinnamon
- pinch of ground ginger
- ¼ tsp sea salt
- ¼ tsp ground black pepper
Method:
1. Preheat the oven to 180°C (355°F) and line a baking tray with baking paper.
2. Whisk the honey and oil together in a small bowl.
3. Trim the tops off the carrots and cut any in half that are larger, to ensure that all the carrots are around the same size.
4. Place the carrots in a large bowl, drizzle over the honey and oil mixture and toss gently to combine. Ensure that all the carrots are lightly coated. Season with salt and pepper, if desired.
5. Roast in the oven for 18-20 minutes, until lightly golden and just fork tender, turning halfway through with tongs.
6. To make the dukkah, heat a non-stick fry pan over medium heat. Add the hazelnuts and cook for 3-5 minutes or until fragrant and lightly toasted, stirring constantly. Transfer to a bowl and set aside to cool.
7. Reheat the fry pan over medium heat. Add the sunflower seeds, sesame seeds, coriander seeds and cumin seeds and cook for 1-2 minutes or until toasted and fragrant. Transfer to the bowl that contains the hazelnuts and set aside to cool.
8. Place the toasted hazelnuts and seeds, turmeric, cinnamon, ginger, salt and pepper in a food processor and pulse for 2-4 minutes or until the mixture resembles a fine crumb.
9. To serve, place the rocket on a serving plate and top with the honey carrots, crumbled feta and dukkah. Enjoy! If you like these, make sure you try my roast baby carrots recipe.
