Banana Bread Balls Recipe

Because these are a mini version of a banana bread loaf, they make a fantastic snack that you can take to work, pack as a school snack or that you can keep at home. Banana is one of the best foods for an upset stomach as well, making this a handy snack when you're not feeling your best.
Banana Bread Balls Recipe
Total time: 15 mins + 30 mins chilling time
Serves: Makes 8-10 balls
Dietary preferences: Vegan, Vegetarian, Gluten-free, Dairy-free
Ingredients:
- 75g walnuts
- 1 tbsp almond meal
- 3 Medjool dates, pitted
- 1 tbsp nut butter of your choice
- ½ tsp vanilla extract
- 1 ripe banana
- desiccated coconut, for rolling
Method:
1. Line a baking tray with baking paper.
2. Place the walnuts in a food processor and process until crumbly.
3. Add the almond meal, dates, nut butter, vanilla extract and banana and process until well combined. The mixture should be a little sticky.
4. If the mixture is too wet add another tablespoon of almond meal. If it is too dry add 1-2 tablespoons of water.
5. Scoop out 1 heaped tablespoon of the mixture and roll into a ball using wet hands.
6. Place the balls on the lined baking tray and refrigerate for 30 minutes.
To serve, roll through the coconut to coat. Enjoy!
