The Best Beet Dip
This dip is delicious served with warmed-up wholemeal pita slices. The Greek yoghurt helps to cut through the sweetness of the beets and really makes this dip a knockout!

Dietary preferences: Vegetarian, Gluten-free
Ingredients:
- 450g beets, roasted
- ½ cup walnuts, chopped
- 2 tbsp Greek yoghurt
- 1 tsp balsamic vinegar
- 1 tbs dill, chopped
- sea salt & ground black pepper, to taste
Method:
- Process all ingredients in a food processor until smooth.
- Top with a small drizzle of extra virgin olive oil.
Guacamole
I loooove guacamole! I usually serve this with wholegrain tortilla chips and it is also great alongside some grilled white fish.

Ingredients:
- 2 ripe avocados, seeded, peeled & halved
- ½ lime juiced
- ½ red onion, diced
- 2 tomatoes, seeded, diced
- 1 tbsp chopped coriander
- 1 garlic clove, minced
- sea salt & ground black pepper
Method:
- Add the avocado and lime juice into a bowl. Use a potato masher or a fork to roughly mash until it is the consistency you like (I prefer mine chunky).
- Mix in the rest of the ingredients.
Roasted Carrot Dip
This dip is delicious with veggie sticks, the roasted carrot flavour really speaks for itself and it tastes amazing.

Dietary preferences: Vegetarian, Gluten-free, Dairy-free, Nut-free
Ingredients:
- 5 carrots, peeled and chopped
- 1 tbsp cumin
- 1 tbsp honey
- 1 tsp smoked paprika
- 1 tbs olive oil
- sea salt & ground black pepper
Method:
- Place carrots on a baking tray and sprinkle with the rest of the ingredients.
- Roast in oven at 160c until tender and caramelized, about 30 or so minutes.
- Puree in a food processor and serve.
